Steps
- Put one large cube in the glass.
- Add the bitter aperitif and the dashes of bitters.
- Top with about half the can. Keep the rest cold and top up as it goes down.
Why it works
An aperitivo is meant to be small, bitter and slow, because the point is appetite rather than refreshment. Building it over one big cube and topping up twice keeps it cold for half an hour without watering it down, which is the only reason the ice format matters here.
