Peach Iced Tea Spritz

Steps
- Fill the glass with ice and add the lemon juice.
- Pour the tea in, then top with the soda water.
- Stir once.
Why it works
The can is still, not carbonated, which is why it tastes heavier than a seltzer at the same dose. Two ounces of soda water is not about flavour, it is about lifting the aromatics off the surface of the drink so you smell peach before you taste sugar. The lemon does the rest: tea and stone fruit both go flat without an acid to hold them up.
