Method
- Reduce the can uncovered in the fridge for 24 hours, down to about two tablespoons.
- Melt the chocolate gently over a bain-marie, then take it off the heat entirely.
- Wait until it is barely warm to the back of your hand. This matters: stirring the syrup into hot chocolate puts you back in the territory where you cannot compute the result.
- Stir the syrup in, then pour onto four plates separately.
Why it works
Blackcurrant and dark chocolate are a classic pairing because both carry the same bitter-fruit edge, and the salt sharpens it rather than sweetening it. The technical point is the temperature: everything here is either cold or has been taken off the heat, so the only heat the dose ever meets is residual and brief.
